dacadent chocolate brownies

Ideal for a Valentines Day treat.  Baking something special yourself truly says "I love you"

315 g dark chocolate
200 g butter
475 g castor sugar
8 eggs
12.5 ml vanilla essence
250 g mixed nuts (pecan nuts, pistachio nuts, blanched almonds)
160 g cake flour
½ cup cacao

Preheat oven to 160°C.
Grease an oven tray (approximately 25cm x 30cm) and line with baking parchment, grease again.
Toast the mixed nuts for ±10 minutes in preheated oven until just golden in colour. Set aside to cool. Roughly chop the nuts.
Sift together the cake flour and cocoa - 3 times.
Melt the chocolate and butter in a bowl over a pan of simmering water. Set aside to cool to room temperature.
Beat the castor sugar, eggs and vanilla essence until well mixed.
Fold in 1/3 of this mixture into the cooled chocolate, and then fold in the other 2/3’s.
Fold in 1/3 of the sifted flour into the egg / chocolate mixture, and then fold in the other 2/3’s.
Pour into the prepared baking tin and bake in preheated oven for 20 minutes - the brownies should be just set (add more time if needed)
When done remove from oven, cool slightly and cut into squares.

Serve warm with vanilla ice cream or whipped vanilla cream and chocolate or caramel sauce.
